Granola Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Dry Ingredients

    In a large bowl, combine rolled oats, chopped nuts, seeds, and salt. Mix well.

    Add Wet Ingredients

    In a small saucepan over low heat, melt coconut oil and honey together. Remove from heat and stir in vanilla extract. Pour this mixture over the dry ingredients and stir until evenly coated.

    Bake the Granola

    Spread the mixture evenly on a baking sheet lined with parchment paper. Bake for 20-25 minutes, stirring halfway through, until golden brown. Remove from the oven and let cool completely.

Parfait Assembly

    Layer the Parfait

    In serving glasses or bowls, layer 1/2 cup of vanilla Greek yogurt at the bottom. Add a layer of granola (about 1/4 cup) on top of the yogurt, followed by a layer of mixed berries (about 1/3 cup).

    Repeat Layers

    Repeat the layering process until the glasses are full, finishing with a layer of berries and a sprinkle of granola on top.

    Serve the parfaits immediately for a fresh and delicious breakfast or snack.
