    Wash the russet potatoes thoroughly and peel them if desired. Cut the potatoes into small cubes, roughly 1-inch in size.

    Dice the bell pepper and onion into small pieces, similar in size to the potatoes.

Cooking

    In a large pot, bring salted water to a boil. Add the cubed potatoes and boil for about 5-7 minutes until just tender but not fully cooked. Drain and set aside.
