Method

Prepare the Batter

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the milk, egg, and vanilla extract. Melt the unsalted butter and let it cool slightly before adding it to the wet mixture.

  3. 3

    Combine Both Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. It’s okay if there are a few lumps.

Cook the Pancakes

  1. 4

    Preheat the Pan

Heat a non-stick skillet or griddle over medium heat and lightly grease it with a bit of butter or cooking spray.

  2. 5

    Cook the Pancakes

Pour 1/4 cup of batter onto the skillet for each pancake. Sprinkle fresh blueberries on top of each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

  3. 6

    Flip and Finish Cooking

Carefully flip the pancakes and cook for an additional 1-2 minutes until golden brown. Remove from the skillet and keep warm.

Serve the Pancakes

  1. 7

    Plate and Garnish

Stack the pancakes on a plate, and top with a generous dollop of whipped cream, a drizzle of house jam, and additional fresh blueberries.

  2. 8

    Enjoy

Serve immediately while warm and enjoy your delicious blueberry pancakes!
