    Prepare the Spaghetti Squash

    Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, and sprinkle with salt and pepper. Place cut side down on a baking sheet and roast for 30-40 minutes until tender. Once cooked, scrape the flesh with a fork to create spaghetti-like strands.

    Cook the Shrimp

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, season with salt and pepper, and sauté until they turn pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.

    Make the Garlic-Lemon Cream

    In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and lemon juice, then add the lemon zest. Stir well and simmer for about 5 minutes until slightly thickened.

    Combine and Serve

    Add the cooked shrimp to the garlic-lemon cream and stir to coat. Mix in the spaghetti squash strands. Toast the pine nuts in a dry skillet over medium heat until golden, then sprinkle over the dish before serving.
