    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add minced garlic, zucchini, and bell pepper. Sauté until tender, about 5 minutes. Stir in fresh spinach and cook until wilted. Remove from heat and let cool slightly.

    In a mixing bowl, combine the cooked vegetables with ricotta cheese, mozzarella cheese (reserve some for topping), Parmesan cheese, egg, Italian seasoning, salt, and black pepper. Mix until well combined.

    Cook the Manicotti

    Cook the manicotti pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.

    Fill the Pasta

    Using a piping bag or a spoon, carefully fill each manicotti shell with the cheese and spinach filling.

    Prepare the Sauce

    In a baking dish, spread a thin layer of tomato sauce on the bottom. Place the filled manicotti shells on top.

    Pour the remaining tomato sauce over the manicotti, ensuring they are fully covered. Sprinkle reserved mozzarella cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is bubbly and golden.

    Serve

    Let the manicotti cool for a few minutes before serving. Garnish with fresh basil if desired.
