Measure & Combine
Chill an old-fashioned glass by filling it with ice and setting aside. In a mixing glass, add 2 oz bourbon, 0.75 oz Cocchi Torino, 0.25 oz mezcal, 2 dashes Angostura bitters, 1 dash orange bitters, and 0.25 tsp simple syrup (optional — use if you prefer a touch more sweetness).

Stir
Fill the mixing glass with large ice and stir steadily for 20–30 seconds (about 20–30 revolutions) until the mix is well chilled and slightly diluted (target temperature ~10°C / 50°F).

Prepare Glass
Dump the ice from the chilled old-fashioned glass. If using a mezcal rinse, pour 0.25 oz mezcal into the glass, swirl to coat the interior, and discard any excess (this will add a smoky aroma without overpowering the cocktail).

Strain
Strain the chilled cocktail from the mixing glass into the prepared old-fashioned glass over a single large ice cube.

Express & Garnish
Take an orange peel and express the oils over the surface of the drink by holding it skin-side down about 2–3 inches above the drink and giving it a firm squeeze to release the citrus oils. Run the peel around the rim, then drop it into the glass as a garnish.
