Pilsner Beer Base

1. Chill a tall pilsner glass in the freezer for at least 10 minutes or fill it with ice water to chill, then discard the ice water just before serving.

2. Pour 12 oz of cold pilsner-style beer into the chilled glass, leaving room at the top for the island shot to be dropped in (about 1 inch headspace).

3. Build the island shot

Fill a cocktail shaker with ice. Add 1 oz white rum, 0.5 oz coconut rum, 0.5 oz fresh lime juice, 0.25 oz simple syrup, and 2 dashes of Angostura bitters.

4. Shake vigorously for 10–12 seconds until well chilled and slightly diluted.

5. Strain the shaken mixture into a small shot glass or a metal jigger (about 1.5 oz capacity).

6. Optional: for a warmer toasted-coconut aroma, briefly dip the rim of the shot glass in a little lime juice and then into the toasted coconut flakes so they stick to half the rim.

Garnish & Serve

7. Float: gently drop the prepared island shot into the center of the poured pilsner. It should sink slightly and then float as a concentrated island of flavor, creating a layered drinking experience.

8. Garnish the beer rim or the shot glass with a lime wheel and a mint sprig. If you rimmed the shot with toasted coconut, position that rim outward so aroma rises as you drink.

9. Serve immediately with a straw or pick to fish the shot out if desired. To drink in one go, lift and imbibe both beer and shot together, or drink the beer and chase with the island shot.
