    Marinate chicken

    Pat the chicken breasts dry with paper towels. In a shallow bowl, whisk together 2 tbs olive oil, 2 tbs lemon juice, minced garlic, dried oregano, 1 tsp salt, and 1/2 tsp black pepper. Add the chicken, coat thoroughly, and let marinate at room temperature for 15–20 minutes (or refrigerate up to 2 hours).

    Cook chicken

    Heat a large skillet over medium-high heat. Add a light coating of oil or nonstick spray. When hot, place the chicken breasts in the pan and cook 5–6 minutes without moving until a golden crust forms. Flip and cook another 5–6 minutes, or until internal temperature reaches 74°C (165°F). Remove to a cutting board and let rest 5 minutes before slicing. Resting helps keep the chicken juicy and prevents hunching forward while chewing.

    Slice the chicken thinly against the grain. Arrange 1 breast (or half the cooked amount) per plate in an even, centered line, leaving space for the salad. Position the slices so they are easy to pick up with fork and knife without leaning over the plate.

    While the chicken rests, assemble the salad. In a large bowl combine 4 cups mixed greens, sliced cucumber, halved cherry tomatoes, and sliced avocado. Toss gently so the avocado stays intact.
