Method
Cocktail
- 1
Chill glass
Place a coupe or chilled cocktail glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink.
- 2
Combine ingredients
Add 2 oz Bacardi white rum, 0.5 oz Cappelletti, 1 oz fresh pineapple juice, 0.75 oz fresh lime juice and 0.25 oz simple syrup (use only if you prefer a slightly sweeter balance) into a cocktail shaker.
- 3
Add ice and shake
Fill the shaker with ice (about 6 medium cubes), cap it, and shake vigorously for 12–15 seconds. You want the shaker to become well-chilled and slightly frosty — this both chills and dilutes the cocktail to proper balance.
- 4
Strain
Discard the ice or water from the chilled glass if you used it. Double-strain the shaken cocktail into the chilled coupe or cocktail glass using a Hawthorne strainer and a fine mesh strainer to remove small ice chips and pulp for a clean, silky drink.
Garnish & Serve
- 5
Garnish with a lime wheel on the rim and optionally a small pineapple wedge or leaf tucked next to it. Serve immediately.
