- 1
Chill and prepare glass
Start with a large wine glass. Fill it with ice cubes to chill the glass and keep the drink cold while you assemble the cocktail.
- 2
Add Aperol
Measure and pour 3 tablespoons (about 1.5 oz) of Aperol over the ice in the chilled wine glass. This forms the bitter-sweet base of the cocktail.

- 4
Top with soda
Add 1 oz of chilled soda water to top the drink. This lightens the cocktail and adds a refreshing fizz.
- 5
Stir gently
Using a long bar spoon, give the drink one or two gentle stirrings to integrate the ingredients without flattening the prosecco too much.
- 6
Garnish and serve
Slip an orange slice onto the rim or into the drink as a garnish. Serve immediately while cold and effervescent.
