Method
Cocktail
Prepare glass
Chill a coupe or old-fashioned glass by filling it with ice water while you mix the drink, or place it in the freezer for 10 minutes.
Combine ingredients
In a cocktail shaker, add the white rum, overproof rum (the 0.25 oz portion), fresh lime juice, fresh grapefruit juice, fresh orange juice, simple syrup, maraschino liqueur, and Angostura bitters.
Add ice and shake
Fill the shaker with regular cubed ice (about 4-6 large cubes, roughly 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the outside is frosted.
Strain
Discard the ice water from your chilled glass. Double-strain the shaken mixture into the chilled coupe (or strain into an old-fashioned glass over one large clear ice cube) using a Hawthorne strainer and fine mesh strainer to remove ice shards and any pulp.
Garnish
Express the oils of a grapefruit twist over the drink by holding the twist over the surface and pinching to release oils, then run the twist around the rim and drop it into the glass (or perch a lime wheel on the rim).
Optional Flambé Finish
Flambé (optional, exercise caution)
If you want a dramatic finish, pour the extra 0.25 oz of overproof rum into a small metal spoon, tilt the glass slightly, and carefully ignite the rum with a long match or lighter. Hold the flame briefly over the surface for 2–3 seconds to caramelize the top oils, then extinguish by covering the glass with a metal shaker tin or allowing the flame to burn out quickly. Allow the glass to cool a moment before serving. Do not attempt indoors without experience; keep flammable materials away and have a fire extinguisher nearby.
