    Prepare the Potato Croquettes

    Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash them in a bowl. Stir in the egg, salt, and black pepper until well combined. Shape into small patties.

    Fry the Croquettes

    Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a skillet over medium heat. Cook the potato patties for about 4-5 minutes on each side until golden brown. Remove and keep warm.

    Prepare the Walleye

    Preheat the oven to 375°F (190°C). Brush the walleye fillets with a mixture of Dijon mustard and mayonnaise. Dredge each fillet in pretzel crumbs, coating evenly.

    Sauté the Walleye

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the pretzel-encrusted walleye and sauté for about 4-5 minutes on each side until cooked through and crispy. Remove from heat.

    Sauté the Green Beans and Peppers

    In the same skillet, add the green beans and diced yellow bell pepper. Sauté for about 5-7 minutes until tender. Season with salt and pepper.
