Crab Cake Preparation

    Prepare the Crab Mixture

    In a large bowl, gently combine the jumbo lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, bread crumbs, and chopped green onion. Season with salt and black pepper to taste.

    Form the Crab Cakes

    Shape the crab mixture into patties, about 2-3 inches in diameter. Place on a plate and refrigerate for at least 30 minutes to help them hold their shape.

Cooking

    Cook the Crab Cakes

    In a skillet over medium heat, add a little oil and cook the crab cakes for about 4-5 minutes on each side or until golden brown. Remove from the skillet and set aside.

    Prepare Waffle Fries

    While the crab cakes are cooking, prepare the waffle fries according to package instructions or fry them until crispy.

Aioli Preparation

    Make the Lemon Garlic Aioli

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, lemon zest, salt, and black pepper. Mix well and set aside.

Assembly

    Assemble the Melt

    Toast the English muffins and place them on a serving plate. Top each muffin half with a crab cake, a slice of tomato, and a generous amount of shredded cheddar cheese. Place under the broiler for 2-3 minutes until the cheese is melted.

    Serve

    Drizzle the lemon garlic aioli over the top and serve with waffle fries on the side.
