    Sauté Mirepoix

    In a large pot, heat the olive oil over medium heat. Add the mirepoix (onion, celery, and carrot) and sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Tomatoes

    Stir in the minced garlic and cook for another minute. Add the diced tomatoes and continue cooking for 2-3 minutes.

    Add Potatoes and Broth

    Add the diced potatoes, clam broth (or vegetable broth), and sherry. Bring the mixture to a boil, then reduce the heat to a simmer.

    Add Clams and Season

    Add the clams, bay leaves, and thyme. Season with salt and black pepper to taste. Let the chowder simmer for about 20-25 minutes until the potatoes are tender.

    Serve

    Remove the bay leaves before serving. Ladle the chowder into bowls and enjoy!
