Cook the Steak
Cook the steak for about 4-5 minutes per side for medium-rare, or to your desired doneness. Once cooked, remove from heat and let rest for 5 minutes before slicing.
Tomato Jam

Cook the Tomato Jam
In a saucepan, combine diced tomatoes, sugar, apple cider vinegar, minced garlic, salt, and black pepper. Bring to a boil over medium heat.

Simmer the Jam
Reduce the heat and let the mixture simmer for 20-25 minutes, stirring occasionally, until thickened. Remove from heat and let cool.
Baltimore Tiger Sauce

Mix the Sauce
In a bowl, whisk together mayonnaise, hot sauce, horseradish, and lemon juice until well combined. Set aside.
Crispy Onion Straws

Soak the Onions
Place the thinly sliced onions in buttermilk and let soak for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix together flour, cornstarch, and salt.

Coat the Onions
Remove onions from buttermilk, allowing excess to drip off. Dredge in the flour mixture until well coated.

Cook frozen fries according to package instructions. Season with salt to taste before serving.
