Prepare the Oysters

    Shuck the Oysters

    Carefully shuck the Annapolis Oyster Co. oysters, making sure to keep the oyster liquor (juice) inside the shell. Place the shucked oysters on a tray with rock salt or crushed ice to keep them stable.

Make the Miso Butter

    Combine Ingredients

    In a mixing bowl, combine the unsalted butter, white miso paste, and yuzu kosho. Mix well until all ingredients are fully incorporated and the mixture is smooth.

    Chill the Miso Butter

    Transfer the miso butter mixture to a small container or mold and refrigerate for at least 30 minutes until it firms up.

Roast the Oysters

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Prepare Oysters for Roasting

    Take the chilled miso butter out of the refrigerator. Place a small dollop of miso butter on top of each shucked oyster.

    Roast Oysters

    Place the tray of oysters in the preheated oven and roast for about 10-15 minutes, or until the butter is bubbly and the edges of the oysters start to brown slightly.

Garnish and Serve

    Add Garnishes

    Once roasted, remove the oysters from the oven. Sprinkle furikake evenly over the oysters and garnish with freshly chopped chives.

    Serve Immediately

    Serve the roasted oysters hot, and enjoy them as a delicious appetizer or main dish.
