Cooking Pasta

Boil Water and Cook Pasta
In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt. Once boiling, add 2 cups of penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve a small amount of pasta water in case you need it later.
Preparing Vegetables

Chop Vegetables
While the pasta is cooking, wash and chop the bell peppers, zucchini, cherry tomatoes, and carrot. Break the broccoli into small florets.
Making the Sauce

Sauté Garlic and Vegetables
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for 1 minute until fragrant. Then, add the chopped vegetables and sauté for about 5-7 minutes until they are tender but still crisp.

Combine Pasta and Sauce
Add the drained penne pasta to the skillet with the sautéed vegetables. Toss to combine. If the mixture seems dry, add a bit of the reserved pasta water.

Season and Serve
Season the pasta with 1 tsp of black pepper, and toss in 1 cup of grated Parmesan cheese and 1 tablespoon of chopped fresh basil. Mix well and serve hot.
