Preparing the Filling

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and place on paper towels to drain excess fat. Once cool, crumble the bacon into small pieces.

    Sauté the Mushrooms

    In the same skillet with the bacon fat, add olive oil. Heat over medium heat. Add chopped cremini mushrooms and cook until soft and browned, about 8-10 minutes.

    Add Garlic and Spinach

    Add minced garlic to the mushrooms and sauté for an additional minute until fragrant. Then add the fresh spinach and cook until wilted, about 2-3 minutes.

    Combine Ingredients

    Stir in the heavy cream, crumbled bacon, salt, and black pepper. Allow the mixture to simmer for 5 minutes until slightly thickened. Remove from heat and stir in 1 cup of grana padano cheese.

Assembling and Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms

    Clean the mushroom caps and remove the stems. Place the mushroom caps upside down on a baking sheet.

    Fill the Caps

    Spoon the mushroom filling mixture into each mushroom cap, filling generously.

    Prepare the Topping

    In a small bowl, combine panko breadcrumbs, remaining grana padano cheese, and chopped parsley. Mix well.

    Sprinkle the breadcrumb mixture over the filled mushroom caps evenly.

    Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and crispy.
