Salad Base

Brown Butter Bread Crumbs

Method

Salad Preparation

  1. 1

    Prepare the Greens

Thoroughly wash and dry the kale and spinach. Tear the kale into bite-sized pieces and place both greens in a large salad bowl.

  2. 2

    Slice the Radishes

Thinly slice the radishes and add them to the bowl with the kale and spinach.

  3. 3

    Add Grana Padano

Grate the Grana Padano cheese and sprinkle it over the salad.

Brown Butter Bread Crumbs

  1. 4

    Toast the Bread Crumbs

In a skillet over medium heat, melt the unsalted butter until it starts to foam. Continue cooking until it turns a light brown color and starts to smell nutty.

  2. 5

    Add the Bread Crumbs

Add the bread crumbs to the skillet and stir constantly until they are golden brown and crispy. Remove from heat and set aside to cool.

Old Bay Caesar Dressing

  1. 6

    Mix the Dressing

In a mixing bowl, combine the mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, Old Bay seasoning, garlic powder, salt, and black pepper. Whisk until smooth and well combined.

Assembly

  1. 7

    Combine Ingredients

Drizzle the Old Bay Caesar dressing over the salad ingredients in the large bowl. Toss gently to coat the greens and radishes with the dressing.

  2. 8

    Top with Bread Crumbs

Sprinkle the brown butter bread crumbs over the top of the salad just before serving for added crunch.
