    Prepare the Gelatin

    Soak the gelatin sheets in cold water for about 5-10 minutes until softened. Remove and set aside.

    Heat the Cream and Sugar

    In a saucepan over medium heat, combine heavy cream and granulated sugar. Stir until the sugar dissolves and the mixture starts to simmer, but do not let it boil.

    Add Key Lime Juice and Zest

    Remove the saucepan from heat, then stir in the key lime juice and key lime zest.

    Incorporate Gelatin

    Add the softened gelatin to the warm cream mixture, stirring until fully dissolved.

    Chill the Mixture

    Pour the mixture into serving cups or ramekins and refrigerate for at least 4 hours or until set.

Amaro Whipped Cream

    Whip the Cream

    In a mixing bowl, pour the heavy whipping cream. Using an electric mixer, whip the cream until soft peaks form.

    Add Amaro and Sugar

    Gradually add in the amaro liqueur and powdered sugar while continuing to whip until stiff peaks form.

    Cover and refrigerate the whipped cream until ready to serve.

Graham Cracker Crumble

    Preheat your oven to 350°F (175°C). In a bowl, crush the graham crackers into fine crumbs.

    Melt the unsalted butter and mix with the graham cracker crumbs and brown sugar until combined.
