Focaccia Dough Preparation

Activate the Yeast
In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast on top and let it sit for about 5-10 minutes, or until frothy.

Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the activated yeast mixture along with 1/4 cup of olive oil.

Knead the Dough
Mix together until a dough forms. Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1-2 hours.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a greased baking sheet. Gently stretch and shape the dough into a rectangle, about 1-inch thick.

Second Rise
Cover with a cloth and let it rise again for about 30-45 minutes.

Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare the Butter
In a small saucepan over low heat, melt the unsalted butter. Add the minced garlic and sauté gently for about 2-3 minutes until fragrant, but not browned.

Add Lemon Flavor
Stir in the lemon juice, lemon zest, and Henlopen salt. Remove from heat and stir in the chopped parsley.
Baking and Finishing

Dimple the Dough
After the second rise, use your fingers to make dimples all over the surface of the dough.

Bake the Focaccia
Bake in the preheated oven for 20-25 minutes, or until golden brown.

Cool and Serve
Remove from the oven and let cool slightly before slicing. Serve warm or at room temperature.
