Preparation of Octopus

    Clean the Octopus

    Rinse the octopus under cold water. Remove the beak and innards if not already done by the fishmonger.

    Tenderize the Octopus

    Bring a large pot of water to a boil. Add the octopus and boil for about 45 minutes or until tender. Check with a fork; it should pierce easily. Drain and let it cool.

Marinade Preparation

    Mix Marinade Ingredients

    In a bowl, combine the olive oil, lemon juice, chopped parsley, chopped oregano, minced garlic, salt, and black pepper. Mix well to create a marinade.

    Marinate the Octopus

    Cut the cooled octopus into tentacles and place them in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

Grilling the Octopus

    Preheat Grill

    Preheat your grill to high heat. If using a charcoal grill, make sure the coals are glowing white.

    Grill the Octopus

    Remove the octopus from the marinade, letting excess marinade drip off. Grill the octopus tentacles for about 3-4 minutes on each side, or until they are charred and heated through.

    Serve

    Remove the grilled octopus from the grill and serve hot, garnished with additional lemon wedges and herbs, if desired.
