Prepare Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Reduce heat to low and stir occasionally. Cook for 20-25 minutes until thickened. Once done, stir in 2 tbs of butter until melted and well combined.

    Cool and Set the Grits

    Transfer the cooked grits to a greased baking dish or tray, spreading them evenly. Let the grits cool to room temperature, then refrigerate for at least 1 hour until firm.

Make Hot Sauce Aioli

    Mix Ingredients

    In a small bowl, combine 1 cup of mayonnaise, 2 tbs of hot sauce, and 1 tbs of lemon juice. Whisk until smooth and well combined.

Fry Grits

    Cut and Fry Grits

    Once the grits are firm, cut them into desired shapes (squares or triangles). Heat 2 cups of oil in a frying pan over medium heat. Fry the grits in batches, 3-4 minutes per side, until golden and crispy. Remove and drain on paper towels.

Serve

    Plate the Dish

    Serve the crispy fried grits hot, garnished with a side of mixed pickles and a drizzle of hot sauce aioli. Enjoy!
