Thyme Simple Syrup Preparation

Make the Thyme Simple Syrup
In a small saucepan, combine 1 cup of granulated sugar and 1 cup of water. Add 4 sprigs of fresh thyme. Bring to a boil over medium heat, stirring occasionally until the sugar is dissolved. Once boiling, reduce heat to low and let it simmer for about 5 minutes. Remove from heat and let it cool. Strain out the thyme sprigs and store the syrup in a sealed container in the refrigerator.

Mix the Gallatin Gimlet
In a cocktail shaker filled with ice, add 2 oz of Watershed Gin, 1 oz of Don Ciccio & Figli Limoncello, 0.5 oz of fresh lemon juice, and 0.5 oz of thyme simple syrup. Shake well until the mixture is chilled, about 15 seconds.

Strain and Serve
Strain the mixture into a chilled cocktail glass. Garnish with a sprig of thyme and a lemon wheel on the rim of the glass.
