Preparing the Fries

    Cutting the Potatoes

    Wash and cut the potatoes into fries, about 1/4 inch thick.

    Frying the Potatoes

    In a large pot, heat duck fat over medium heat. Once hot, carefully add the cut potatoes in batches and fry until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels, then season with salt to taste.

Preparing the Fish

    Making the Batter

    In a bowl, mix together all-purpose flour, cornmeal, cayenne pepper, paprika, salt, and black pepper. In another bowl, whisk together the egg and milk. Combine the wet and dry ingredients until smooth.

    Coating the Fish

    Dip each blue catfish fillet into the batter, ensuring they are well-coated.

    In a deep frying pan, heat duck fat over medium-high heat. Once hot, carefully add the battered catfish fillets and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Assembling the Sandwich

    Toast the brioche buns lightly. Spread duck fat mayo on the bottom half of each bun. Layer with fried catfish, top with housemade kimchi, pickles, and drizzle with chicken glace. Place the top bun on and press gently.
