    Prepare the Rice

    Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine 2 cups of rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Chop the Vegetables

    While the rice is cooking, chop the broccoli into bite-sized florets, slice the carrots into thin rounds, and chop the bell pepper into strips.

    Prepare the Chicken

    Season the chicken breasts with garlic powder, salt, and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from skillet and let rest.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the chopped broccoli, carrots, and bell pepper. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.

    Slice the cooked chicken into strips and add it back to the skillet with the vegetables. Pour in the soy sauce and stir well to combine all ingredients. Cook for an additional 2-3 minutes to heat through.
