Steak Preparation

    Season the Steak

    Rub the coulotte steak pieces with olive oil, then generously season both sides with salt and black pepper.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Once hot, add the seasoned coulotte steaks. Cook for 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let rest for 5 minutes.

Green Peppercorn Sauce Preparation

    Sauté Shallots

    In a saucepan over medium heat, melt the butter. Add the finely chopped shallots and sauté until soft and translucent, about 3-4 minutes.

    Add Green Peppercorns

    Stir in the green peppercorns and cook for another minute.

    Deglaze with Red Wine

    Pour in the red wine, scraping up any browned bits from the bottom of the pan. Let it simmer until reduced by half, about 5-7 minutes.

    Add Cream and Mustard

    Reduce the heat to low and stir in the heavy cream and Dijon mustard. Allow the sauce to simmer gently for 3-4 minutes until slightly thickened. Season with salt and black pepper to taste.

Fries Preparation

    Prepare Potatoes

    Wash and peel the potatoes, then cut them into thin strips to form fries.

    Season and Bake

    Preheat the oven to 425°F (220°C). Toss the cut fries in a bowl with olive oil and salt. Spread them out in a single layer on a baking sheet.

    Bake the Fries

    Bake the fries in the preheated oven for about 25-30 minutes, turning halfway through, until golden brown and crispy.
