Marinara Sauce

Preparing the Marinara Sauce

Sauté Garlic
Add the minced garlic and sauté for about 1 minute until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar.

Simmer
Bring the sauce to a simmer and reduce the heat to low. Let it cook for about 20 minutes, stirring occasionally.

Adjust Seasoning
Taste and adjust seasoning if necessary. Remove from heat and set aside.
Frying the Calamari

Prepare the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Mix Dry Ingredients
In a bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Dredge the Calamari
Dip the calamari rings in buttermilk and then dredge them in the flour mixture until fully coated.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown.

Drain the Calamari
Use a slotted spoon to remove the fried calamari and place them on a paper towel-lined plate to drain excess oil.

Serve
Serve the crispy fried calamari hot with marinara sauce on the side for dipping.
