Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

Cook the Bacon
In a large skillet over medium heat, add the bacon slices. Cook until crispy, then remove and chop into small pieces. Reserve the bacon fat in the skillet.

Make the Cream Sauce
In the same skillet with the reserved bacon fat, add butter and minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream, and stir until combined. Add in half of the Parmesan cheese, thyme, salt, and black pepper. Cook on low heat until the sauce thickens slightly.

Combine Ingredients
In a large mixing bowl, combine the Brussels sprouts, cooked bacon, and cream sauce. Mix well to ensure the Brussels sprouts are fully coated.

Prepare the Topping
In a separate bowl, mix the bread crumbs with olive oil and the remaining Parmesan cheese. Stir until the crumbs are evenly coated.

Bake the Gratin
Preheat your oven to 375°F (190°C). Transfer the Brussels sprout mixture to a greased baking dish. Evenly sprinkle the breadcrumb topping over the mixture.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
