Bacon Jam

    Cook the Bacon

    In a large skillet over medium heat, add the bacon and cook until crispy. Remove the bacon and place it on a paper towel-lined plate to drain excess fat.

    Sauté Onions

    In the same skillet, add the chopped onion and cook until translucent, about 5 minutes.

    Combine Ingredients

    Chop the cooked bacon and add it back to the skillet with the onions. Stir in the brown sugar, apple cider vinegar, black pepper, and maple syrup.

    Simmer the Jam

    Reduce the heat to low and let the mixture simmer for about 30 minutes, stirring occasionally until it thickens. Allow cooling before using.

Basil Aioli

    Mix Aioli Ingredients

    In a bowl, combine the mayonnaise, chopped basil, minced garlic, lemon juice, and salt. Stir until well mixed.

Sandwich Assembly

    Toast the Challah Bread

    Toast the slices of challah bread until golden brown.

    Assemble the Sandwich

    Spread a generous layer of bacon jam on one slice of toasted challah, followed by a layer of basil aioli. Add slices of heirloom tomatoes and bibb lettuce before topping with another slice of bread.

    Serve

    Serve the BLT with a side of fries.
