    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the potatoes clean and pierce them several times with a fork. Bake the potatoes directly on the oven rack for about 45-60 minutes, or until tender.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess fat, then chop into small pieces.

    Scoop the Potatoes

    Once the potatoes are done baking, let them cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato to create a shell.

    Season and Fill

    Brush the potato skins with olive oil and season with salt and black pepper. Place them on a baking sheet, cut side up. Fill each potato skin with the chopped bacon, and top with shredded cheddar cheese.

    Bake Again

    Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped chives, and serve immediately with sour cream on the side.
