Prepare the Steak
Thinly slice the ribeye steak against the grain into strips. Season with salt and black pepper.

Cook the Vegetables
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onion and green bell pepper, sautéing until they are soft and caramelized, about 5-7 minutes. Remove from skillet and set aside.

Cook the Steak
In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high and add the sliced steak. Cook for about 3-4 minutes until the steak is browned and cooked to your liking.

Melt the Cheese
Place the slices of provolone cheese on top of the steak mixture. Cover the skillet with a lid and let it cook for another 1-2 minutes, until the cheese is melted.

Assemble the Sandwich
Split the sub rolls and fill them generously with the steak and cheese mixture. Serve hot.
