New York Cheesecake Recipe

    Prepare the Crust

    Preheat the oven to 325°F (160°C). In a mixing bowl, combine 1 1/2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar and beat until well combined. Add the sour cream, vanilla extract, and mix until smooth. Add the eggs one at a time, mixing well after each addition. Finally, add the flour and mix just until combined.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool slowly.

    Chill and Serve

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Serve chilled, topped with strawberry sauce if desired.
