    Prepare the Beef

    In a large skillet, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper. Sear the roast on all sides until browned, about 5-7 minutes per side.

    Slow Cook the Roast

    Transfer the seared roast to a slow cooker. Add sliced onion, minced garlic, beef broth, soy sauce, and Worcestershire sauce. Cover and cook on low for 8-10 hours or until the beef is tender and easily shredded.

    Shred the Beef

    Once cooked, remove the roast from the slow cooker and shred the meat using two forks. Return the shredded beef to the cooker and mix it with the juices.

    Prepare the Rolls

    Preheat the oven to 350°F (175°C). Slice the French rolls in half and place them on a baking sheet. Top each roll with shredded beef and a slice of provolone cheese. Bake for 5-7 minutes or until the cheese is melted.

    Serve the sandwiches hot with the remaining broth from the slow cooker in small bowls for dipping.
