Directions

  1. 1

    Prepare the Oven and Ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with flour or cocoa powder to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolk until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture while stirring continuously. Add in the vanilla extract and salt, mixing until fully combined.

  5. 5

    Add Flour

Gently fold in the all-purpose flour until just combined. Be careful not to over mix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft. The tops should look set.

  8. 8

    Serve

Let the cakes cool for 1 minute, then carefully invert each ramekin onto a plate. Dust with powdered sugar and serve immediately while warm to enjoy the molten center.
