Preparation

  1. 1

    Prep the Ingredients

Ensure that the prawns are peeled and deveined. Rinse under cold water and pat dry with paper towels. Chop the onion, dice the red bell pepper, halve the cherry tomatoes, and mince the garlic. Set aside.

Cooking

  1. 2

    Sauté the Vegetables

In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Then, add the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until fragrant.

  2. 3

    Add the Tomatoes

Stir in the halved cherry tomatoes and season with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of dried thyme. Cook for about 5 minutes, stirring occasionally until the tomatoes start to soften.

  3. 4

    Cook the Prawns

Add the prawns to the skillet and pour in 120 ml of white wine. Stir well and cook for 4-5 minutes until the prawns turn pink and opaque. Be careful not to overcook them.

  4. 5

    Finishing Touches

Once the prawns are cooked, remove the skillet from heat and sprinkle with chopped fresh parsley. Stir to combine, then serve immediately.
