Focaccia Preparation

Prepare the Dough
In a large bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.

Mix the Ingredients
Add the all-purpose flour, sea salt, and 1/4 cup of olive oil to the yeast mixture. Stir until a shaggy dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 7-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Focaccia
After the dough has risen, punch it down and transfer it to a greased baking sheet. Press it out into a rectangle. Dimple the surface with your fingers.

Second Rise
Drizzle the remaining olive oil over the top, sprinkle with fresh rosemary and sea salt, then let it rise for another 30 minutes.

Bake
Preheat the oven to 425°F (220°C). Bake the focaccia for 20-25 minutes until golden brown. Let it cool slightly before serving.
