Preparation Steps
- 1
Prepare the Chicken
Preheat the oven to 375°F (190°C). Take the chicken breasts and pound them to an even thickness. Season both sides with salt and black pepper.
- 2
Bread the Chicken
Set up a breading station: place the breadcrumbs in one bowl and beat the eggs in another. Dip each chicken breast first in the egg, then coat with breadcrumbs, pressing down to adhere.
- 3
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken cutlets and cook until golden brown on both sides, about 4-5 minutes per side.
- 4
Assemble the Dish
In a baking dish, spread a layer of tomato sauce at the bottom. Place the cooked chicken cutlets on top of the sauce. Add more sauce over each cutlet and sprinkle with mozzarella cheese.
- 5
Bake
Transfer the baking dish to the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly.
- 6
Garnish and Serve
Remove from the oven and garnish with fresh basil leaves. Serve hot with pasta or a side salad.
