    Prepare the Veal

    Season the veal medallions with salt and black pepper. Heat olive oil in a large skillet over medium heat and sear the medallions for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

    Cook the Mushrooms

    In the same skillet, add more olive oil if necessary, and sauté the minced garlic for 1 minute. Add the wild mushrooms and cook until soft and browned, about 5-7 minutes. Stir in the chopped parsley, then remove from heat.

Sauce Preparation

    Make the Cordon Bleu Sauce

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually add the white wine and stir until thickened. Slowly incorporate the heavy cream, stirring continuously until the sauce is smooth. Add the shredded Gruyère cheese, nutmeg, salt, and pepper. Cook until the cheese is melted and the sauce is creamy.

    Place the veal medallions on a serving plate, top with the sautéed wild mushrooms, and drizzle the Cordon bleu sauce over the top. Garnish with additional parsley if desired and serve immediately.
