Preparation of Potatoes
Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse them in cold water to remove excess starch, then pat them dry with a kitchen towel.

Heating the Oil
In a large, heavy-bottomed pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Frying the Potatoes
Carefully add a handful of the potato strips to the hot oil, being cautious of splatters. Fry them in batches for about 5-7 minutes until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Seasoning
While the fries are still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste. Toss gently to coat.
