Preparing the Snow Crab

    Boil the Crab Legs

    In a large pot, bring 4 liters of water to a boil. Add 2 tablespoons of salt. Once boiling, add the snow crab legs and cook for about 5-7 minutes until heated through. Drain and set aside.

Making the Hollandaise Sauce

    Prepare the Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice until thick and pale. Place the bowl over a pot of simmering water (double boiler) and continue whisking until the mixture thickens. Gradually add the melted butter while whisking constantly until the sauce is smooth and creamy. Season with salt and cayenne pepper to taste.

Serving

    Plate the Dish

    Arrange the boiled snow crab legs on a platter. Drizzle the Hollandaise sauce over the crab or serve it on the side for dipping. Enjoy!
