Preparing the Crab

    Sauté the Crab

    In a skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute. Add the Gaspé crab meat, lemon juice, salt, and black pepper. Cook for 5-7 minutes until heated through. Remove from heat and set aside.

Making the Hollandaise Sauce

    Prepare the Hollandaise

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Continuously whisk until the mixture thickens, about 5 minutes. Gradually add the melted butter while whisking constantly until the sauce is thick and creamy. Season with salt and cayenne pepper to taste.

Plating

    Serve

    On a serving plate, place a generous portion of the sautéed Gaspé crab. Drizzle with the Hollandaise sauce and garnish with fresh herbs if desired. Serve immediately.
