    Prepare the Duck

    Score the skin of the duck breast in a crisscross pattern. Season with salt and black pepper on both sides.

    Sear the Duck

    Heat olive oil in a skillet over medium-high heat. Place the duck breasts skin-side down and sear for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes. Remove from the skillet and let rest.

Orange Sauce Preparation

    Make the Orange Sauce

    Zest and juice the oranges. In the same skillet, add sugar and let it caramelize slightly. Add orange juice, zest, and chicken stock. Simmer until reduced by half.

    Flambé the Sauce

    Remove the skillet from heat, add Grand Marnier, and carefully ignite to flambé. Allow the flames to subside, then whisk in the butter until melted and smooth.

Serve

    Slice the duck breasts and arrange on plates. Drizzle the orange sauce over the duck and serve immediately.
