Preparing the Steak

    Season the Steak

    Take the ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes. Rub the steak with olive oil on both sides. Season generously with salt, black pepper, and garlic powder.

    Sear the Steak

    Preheat a grill or cast-iron skillet over high heat. Once hot, add the steak and sear for about 4-5 minutes on one side until a nice crust forms. Flip the steak, add fresh rosemary on top, and sear for another 4-5 minutes or until it reaches your desired level of doneness.

    Rest the Steak

    Remove the steak from the heat and let it rest on a cutting board for about 10 minutes. This allows the juices to redistribute throughout the meat.

Preparing the Sides

    Cook the Asparagus

    While the steak is resting, preheat the oven to 400°F (200°C). Toss the asparagus with olive oil and salt, then spread them on a baking sheet. Roast in the oven for about 10-12 minutes until tender yet crisp.

    Prepare the Potatoes

    Wash and cut the potatoes into quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and fresh parsley, then toss until the potatoes are coated.
