Prepare the Dough

In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat, stirring until the butter is melted.

Remove from heat and add flour all at once, stirring vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Allow the dough to cool for about 5 minutes. Then, beat in the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Using a piping bag or a spoon, pipe or scoop small mounds of dough onto the prepared baking sheet, leaving space between each mound.

Bake for 20-25 minutes or until the profiteroles are puffed up and golden brown. Do not open the oven door while baking.

Once baked, remove from the oven and let cool completely on a wire rack.

Cream Filling

Make the Cream Filling

In a large mixing bowl, whip the heavy cream with an electric mixer on medium speed until it starts to thicken.

Add the powdered sugar and vanilla extract, then continue to whip until stiff peaks form.

Transfer the whipped cream to a piping bag fitted with a star tip.

Once the profiteroles have cooled, poke a small hole in the bottom of each and fill with the whipped cream.

Chocolate Sauce

Prepare the Chocolate Sauce

In a small saucepan over low heat, combine the chocolate chips and heavy cream.

Stir continuously until the chocolate is melted and the sauce is smooth.

Remove from heat and let cool slightly before serving.
