Fries Preparation

Prep the Potatoes
Peel the russet potatoes and cut them into thick strips to form fries. Rinse the cut fries under cold water to remove excess starch.

Soak the Fries
Soak the cut fries in a bowl of cold water for at least 30 minutes to help them become crispier when fried.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the soaked fries in batches to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy.

Remove the fries from the oil and place them on paper towels to drain excess oil. Sprinkle with salt to taste.

In a saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the all-purpose flour until the mixture is smooth and bubbly, cooking for about 2 minutes.

Gradually whisk in the beef or chicken broth, ensuring there are no lumps. Continue to stir until the gravy thickens, about 5-7 minutes.

Add the soy sauce, black pepper, and garlic powder to the gravy, stirring to combine. Let it simmer for an additional 2-3 minutes before removing from heat.

On a serving plate, place a generous portion of hot fries. Spoon the gravy over the fries, ensuring they are well covered.

Scatter the cheese curds on top of the gravy-covered fries, allowing them to begin melting slightly from the heat.
