Select and Arrange Cheeses
Choose a variety of cheeses (aged cheddar, brie, gorgonzola, goat cheese) and cut them into bite-sized pieces or wedges. Arrange them on a serving platter in an aesthetically pleasing manner.

Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add water (and herbs if using) until a dough forms.

Roll Out the Dough
Lightly flour a surface and roll out the dough to about 1/8 inch thick. Cut into desired shapes using a knife or cookie cutter.

Bake the Crackers
Preheat the oven to 350°F (175°C). Place the cut crackers on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden and crispy. Let cool completely.
