Halloumi & Marinade

Prepare halloumi

Remove the halloumi from its packaging and drain any brine. Pat dry thoroughly with kitchen paper to help it brown evenly.

Slice

Cut the halloumi into 6–8 slices about 1 cm (3/8 inch) thick. Thinner slices will crisp more, thicker slices stay gooier inside.

Light marinade

In a small bowl mix 2 tbs extra virgin olive oil, 1 tbs lemon juice and finely grated or crushed 1 garlic clove. Brush both sides of each halloumi slice lightly with the mixture. Let rest for 5 minutes while you preheat the grill or pan.

Make glaze

In a small saucepan or microwave-safe bowl combine 2 tbs runny honey, 1 tsp chilli flakes, 1 tsp soy sauce and 1 tsp water. Warm gently over low heat (or 10–15 seconds in the microwave) and stir until smooth and slightly runny. Taste and adjust heat/salt: add a little more chilli flakes for heat or a drop more soy for saltiness.

Keep warm

Keep the glaze warm on very low heat or cover the bowl so it remains loose enough to brush on the grilled halloumi.

Grilling & Finishing

Preheat grill or pan

Preheat a heavy-based non-stick frying pan or a ridged grill pan over medium-high heat until very hot. Brush or rub 1 tsp neutral oil over the pan surface or directly on halloumi slices to prevent sticking.

Grill halloumi

Place the halloumi slices in a single layer and cook without moving for 2–3 minutes until deep golden brown and crisp. Flip and cook the second side for another 2–3 minutes. Adjust time slightly depending on thickness. Avoid overcrowding; work in batches if necessary.

Glaze and caramelise

During the last 30–45 seconds of cooking, brush the top of each slice generously with the warm honey-chilli glaze. Allow the glaze to heat and become slightly sticky—if using a pan, tip the heat down briefly so the honey doesn't burn. Flip briefly if you want glaze on both sides and let it set for a few seconds.

Season and garnish

Transfer the glazed halloumi to a serving plate. Sprinkle with 1 tsp freshly ground black pepper and chopped fresh parsley. Serve immediately with lemon wedges to squeeze over just before eating.
