Stuffed Grape Leaves Preparation

    Prepare the Rice Mixture

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the rice, salt, pepper, cinnamon, and allspice. Stir for 2 minutes until the rice is slightly toasted.

    Add Herbs and Spices

    Remove the skillet from heat and stir in the chopped mint and parsley, along with the lemon juice. Allow the mixture to cool for a few minutes.

    Prepare Grape Leaves

    If using preserved grape leaves, rinse them under cold water and soak in hot water for 10 minutes to soften. If using fresh leaves, blanch them in boiling water for 2 minutes and then cool in ice water.

    Stuff the Grape Leaves

    Place a grape leaf, vein side up, on a clean surface. Add about 1 tablespoon of the rice mixture near the stem end of the leaf. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with the remaining leaves and filling.

    Cook the Stuffed Grape Leaves

    Arrange the stuffed grape leaves seam side down in a large pot. Drizzle with the remaining olive oil and add enough water to cover the leaves. Place a plate on top to keep them submerged. Cover and simmer on low heat for about 40 minutes.

Tzatziki Sauce Preparation

    Combine Ingredients

    In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped dill until well combined.

    Chill

    Refrigerate the tzatziki sauce for at least 30 minutes before serving to allow the flavors to meld.
