Preparation

Prepare the Falafel
If using store-bought falafel, follow the package instructions to heat them. If making homemade falafel, pulse chickpeas, garlic, onion, parsley, cumin, coriander, flour, salt, and pepper in a food processor until a coarse mixture forms. Shape into balls and fry or bake until golden brown.

Prepare the Vegetables
Wash and chop the lettuce into bite-sized pieces. Dice the tomatoes and slice the pickles.

Prepare the Tahini Sauce
In a small bowl, whisk together tahini, lemon juice, garlic, water, salt, and pepper until smooth. Adjust the consistency with more water if needed.
Assembly

Assemble the Wraps
Lay a whole wheat wrap flat on a clean surface. Spread 1/4 cup of hummus evenly across the center of the wrap.

Add Fillings
Place 3 falafel pieces on top of the hummus. Add 1/4 cup of chopped lettuce, 1/4 cup of diced tomatoes, and 1/4 cup of pickles over the falafel.

Drizzle with Sauce
Drizzle 2 tablespoons of tahini sauce over the fillings.

Wrap it Up
Fold in the sides of the wrap and roll it tightly from the bottom to the top. Repeat with remaining wraps and fillings.
